DAD'S ORIGINAL SARDINIAN GNOCCHI

Sardinian Gnocchi Demiurge
with extra garlic and chili, parsley and goat cheese.
INGREDIENTS:
One jar of Bongiovi «Dad’s Original Sauce
2-3 portions of Sardinian gnocchi
2 shallots
1 celery stick
1-2 garlic cloves
1 half hot chili pepper
2 tablespoons tomato paste
150 ml red wine
1/2 bunch parsley
Goat’s cream cheese
Parmesan
A few basil sprigs
PREPARATION:
Cook the Gnocchetti Sardi in salted water until al dente. Dice the shallots and fry in a pan with olive oil until translucent. Chop the garlic cloves and chili pepper and add.
Add the tomato paste and “Dad’s Original” sauce. Cook for 2-3 minutes. Add the halved celery sticks. Deglaze with red wine. Continue to simmer over low heat until the amount is reduced by half. Then add 100 ml of pasta water and season with pepper (no salt as the cheese will add some salt later).
Mix the finished gnocchetti in a pan with chopped parsley.
Arrange the finished dish on the plates with goat's cheese flakes, parmesan and finely chopped basil and drizzle some olive oil over it.
